The latest generation of Capture Jet™ technology rests on the association of two sets of nozzles supplied with an extremely low exhaust air volume (a maximum of 30 m³/h/ml of jets). Installed on ventilated ceilings in the form of small beams, these nozzles literally encircle the covered cooking areas (also called active areas).

- The horizontal nozzles push vapours back towards the filters or inside the active area, improving the capture efficiency.

- The vertical nozzles form a curtain of air that provides a second protection against smoke spillage. It is not a question of increasing the containment volume of the ventilated ceilings - with a ceiling being far larger in surface area to a set of hoods. The goal is in fact to prevent the smoke getting mixed up with the fresh air blown out by the supply units. These units are for the most part installed directly next to the active area.

What will be the overall exhaust airflow reduction?
The overall reduction depends on the installation configuration of the ventilated ceiling, especially its installation height. All Halton ventilated ceilings are equipped with the Capture Jet™ technology and are combined with Laminar flow units for an efficient makeup air. All conditions are gathered to always get the lowest exhaust airflow rate levels.

With the Capture Jet­™ technology, there's no compromise on the speed of smoke capture and air quality!

A ventilated ceiling typically covers the cooking area. Compared to hoods, the so called containment volume is logically much bigger. Therefore, the question is not if the smoke will be captured but rather how fast it will be removed by the exhaust plenums located above this cooking area. And if it will be removed quickly enough to prevent heavy grease particles dropping to the floor.

Thanks to the efficient action of the Capture Jets, and even with 15% less exhaust airflow, tests carried out in our R&D laboratories show that the smoke released by cooking appliances is removed rapidly and effectively. The Capture Jets are also incredibly efficient at "isolating" the supply units located around the cooking area from the cooking area itself. Smoke and heat will not be mixed with the fresh air blown into the kitchen. In addition, the supply units do not generate drafts. All these factors serve to maintain an ideal air quality and thermal comfort in the occupied zone.
