Commercial kitchens routinely pose unique challenges for HVAC design professionals and property owners. The rapid growth of Ghost Kitchens to satisfy the consumer demand for delivered meals has made this challenging design even more difficult. A typical Ghost Kitchen facility has between 20 and 30 kitchens that must have the flexibility to accommodate a variety of cooking equipment in multiple combinations. To avoid excessive energy costs, the kitchen exhaust system should be easily adjustable to meet the varying demands of each cooking lineup and different hours of operation.

Similarly, the replacement air must be controlled in concert with the exhaust to keep the kitchens balanced and provide proper ventilation for the occupants. At the same time, the design must account for the added heat and humidity from the outdoor air and provide a strategy to keep all the kitchens comfortable. Finally, the designer must understand the requirements for exhaust filtration along with smoke and odor control. All these challenges must be factored in and balanced to arrive at the optimal design that delivers a safe, comfortable kitchen with the lowest operating cost possible.
