Save energy thanks to a reduction in exhaust airflow rates of up to 15%!
In a kitchen fitted with a ventilated ceiling, the cooking areas are fully open, with no hoods extending downwards from the ceiling capturing the smoke "at the source".
And if you could save even more money?
How does the Capture Jets work?
The latest generation of Capture Jet™ technology rests on the association of two sets of nozzles supplied with an extremely low exhaust air volume (a maximum of 30 m³/h/ml of jets). Installed on ventilated ceilings in the form of small beams, these nozzles literally encircle the covered cooking areas (also called active areas).
- The horizontal nozzles push vapours back towards the filters or inside the active area, improving the capture efficiency.
- The vertical nozzles form a curtain of air that provides a second protection against smoke spillage. It is not a question of increasing the containment volume of the ventilated ceilings - with a ceiling being far larger in surface area to a set of hoods. The goal is in fact to prevent the smoke getting mixed up with the fresh air blown out by the supply units. These units are for the most part installed directly next to the active area.
What will be the overall exhaust airflow reduction?
And if you could save even more money?
Unrivalled working conditions and productivity.
Labour shortage is one of the major challenges faced by commercial catering. The comparatively low appeal of the Chef's position can be attributed to the unpleasant thermal comfort faced in the kitchen. This discomfort is related to air temperature and speed, the heat radiated by cooking appliances and humidity.
The Indoor Environment Quality is a more global notion that is also based on lighting, sound level and visual comfort. Halton's Capture Jet™ ventilated ceiling is the best possible solution to significantly improve all these factors at once.
How do the Capture Jet™ ventilated ceilings improve the Indoor Environment Quality?
With the Capture Jet™ technology, there's no compromise on the speed of smoke capture and air quality!
Thanks to the efficient action of the Capture Jets, and even with 15% less exhaust airflow, tests carried out in our R&D laboratories show that the smoke released by cooking appliances is removed rapidly and effectively. The Capture Jets are also incredibly efficient at "isolating" the supply units located around the cooking area from the cooking area itself. Smoke and heat will not be mixed with the fresh air blown into the kitchen. In addition, the supply units do not generate drafts. All these factors serve to maintain an ideal air quality and thermal comfort in the occupied zone.
Unrivalled visual comfort to switch from air quality to Indoor Environment Quality!
Thanks to the 15% reduction in exhaust airflow rates, the sound pressure levels are also much lower compared to traditional ceilings.
A cost effective overall solution.
The first reason to choose a ventilated ceiling is to benefit from unrivalled working conditions for the kitchen staff. However, the exhaust airflow rates are always going to be greater in comparison to any kind of hood as a ventilated ceiling is installed far higher up.
Having said that, compared to traditional ventilated ceilings, the Capture Jet™ technology still allows you to save money. The 15% reduction in exhaust airflow rates alone reduces the energy consumption used to heat and cool the fresh air blown inside the kitchen.
Unrivaled working conditions lead to better profitability.
As highlighted above, improved working conditions lead not only to increased productivity in the workplace but also contribute to a reduction in staff turnover and sick leave. In addition, a better working environment can forge a more cohesive workforce and as such labour costs are reduced. Even if it's difficult to assess in real terms the actual profitability of these improvements, the results are undeniable.
A ventilated ceiling represents an all-encompassing solution. As opposed to a ventilation hood, it naturally includes the exhaust itself with a high quality supply technology. It also includes:
- Light beams which provide uniform lighting with fewer shadows;
- A hard false ceiling around the cooking areas. Made of aluminium or stainless steel, they are more fire resistant and stable in the event of fire.
A cost effective solution.
To calculate the payback time of a Capture Jet™ ventilated ceiling compared to that of a traditional hood, there are a few factors to take into account. Namely, the energy savings gleaned, the increase in profitability of the staff and the many technical component parts that make up the final efficient system. All in all, a Halton's Capture Jet™ ventilated ceiling is a cost effective solution with a short return on investment.
