Halton supported Saddleback Culinary’s teaching kitchens in California with Capture Jet™ exhaust hoods designed to improve capture and containment in variable cooking conditions, helping teams pursue right-sized airflow and energy-conscious ventilation design.
Saddleback College’s Culinary Arts program operates out of the Saddleback@ATEP campus in Tustin, California—an approximately 20,000 sq. ft. culinary facility built for hands-on learning. The space includes four state-of-the-art commercial teaching kitchens plus a student-run restaurant (about 70 seats), with additional learning spaces.

Saddleback Culinary operates multiple teaching kitchens where cooking loads shift rapidly from demonstrations to full cooklines, across different stations and class schedules. The ventilation strategy required reliable capture and containment for a wide range of cooking processes, while supporting an approach that helps avoid over-ventilation and the energy impacts associated with exhaust volume and make-up air.
High-Performance Hood Design That Supports Reduced Airflow
Halton provided Capture Jet™ kitchen exhaust hoods to support strong capture and containment in a dynamic culinary education environment. Capture Jet™ technology is engineered to enhance hood performance by directing airflow to better manage cooking plumes at the hood face, helping keep heat, smoke, and odors contained at the source. This design approach can reduce exhaust airflow compared to traditional canopy hoods, helping to balance containment performance, comfort, and energy-conscious ventilation in spaces with highly variable use
