Halton become involved in this prestigious project through the Foodservice Consultant (Humble Arnold Associates) but also via the Mechanical Contractor (Long and Partners). The challenge was to design a complete filtration package able to be discharged at the 32nd floor without any grease, smoke or odours being discharged to atmosphere. The site brought various challenges due to very high airflows and low slab heights. Oblix wanted to offer dishes delivered in Rainer Becker’s signature style of upscale, sophisticated, urban dining, and to do this incorporated high end, heavy duty cooking appliances that required careful filtration consideration.
Salix leading the project install with Halton’s Ventilation experience were looking at two main areas:
– A high end front of house cooking experience, enabling customers to walk through the kitchen, watching the chefs in action, whilst walking to their tables. This show kitchen concept was based on demanding heavy duty char grilles, Josper Oven and Rotisseries. Halton had to look at a mix of both Cold Water Mist and UV technologies as the primary filtration within the canopies. This, mixed with the Capture Jet™ technology would provide the most efficient solution in a highly challenging area. The show kitchen canopy being decoratively clad, supply air had to be introduced via other means, without affecting the balance of the kitchen area.
– The hot kitchen had a mix of high and low duty cooking and required UV filtration with Capture Jet™ technology.
After the canopies are the PolluStop Filtration units. These contain pre filters, bag filters, HEPA filter and carbon filters all leading onto the fan unit and discharge to atmosphere. The ceiling void was incredibly tight and Halton had to work closely with the Mechanical contractors to fit all plants within the ceiling void. Consideration had to be given to the access of the units and future on-going maintenance of the units.
