Lotte World Tower is a 123-floor, 555-metre supertall skyscraper located in Seoul.
After 13 years of planning and site preparation, the tower gained final approval to start construction by the government in November 2010 and the first groundbreaking activities of piling and frame assembly were observed at the construction site in March 2011.

It opened to the public on April 2017 and is currently the tallest building in the OECD, and is the 5th tallest building in the world.

Signiel, the luxury hotel brand launched by Lotte Hotels and Resorts, is situated on levels 76 to 101 of the Lotte World Tower and feature a Parisian banquet menu offered by Michelin-starred chef Yannick Alleno.

Located on the 81st floor of Signiel hotel, Stay is a stylish restaurant with breath-taking panoramic views on the city.

This modern fine dining restaurant offers its guests an accessible and uncommon gustatory experience through a creative, refined French cuisine.

Stay, Modern Restaurant needed solutions fulfilling the latest requirements of hygiene and efficiency as well as excellent working conditions for employees.
Capture Jet™ and Capture Ray™ technologies were thus chosen to equip the kitchen.

All hoods fitted with the constantly evolving Capture Jet™ technology bring about an impressive 30 to 40% reduction in exhaust airflow rates, compared to traditional hoods removing exactly the same heat load. That is whilst remaining just as efficient in capturing and containing all the smoke released by cooking appliances.
Such a significant reduction in exhaust airflow rates also mean a huge saving on the energy needed to heat and cool the fresh air introduced into the kitchen.

Integrated in Capture Jet™ hoods, the UV-C Capture Ray™ technology is designed to neutralise grease particles, grease vapours and organic compounds. Limited grease deposits means improved fire safety and hygiene levels. Capture Ray™ technology controls the risk of fire at its source, it prevents a fire from quickly spreading through the entire kitchen, restaurant or building via the exhaust ductwork.
