A kitchen with a soul.

As Owner Miky Grendene states “I have always believed the kitchen has soul, it’s the heart of a home—it’s where families share, cook, eat, and laugh together. I wanted to recreate this experience on a larger scale for people to be able to see, touch, and understand how we work and how we prepare our food.”

Next Step Design’s Lead Designer and Principal, Russell Stilwell, FCSI, took this inspiration and helped create a visual and culinary showcase. Located at Saks Brickell City Centre in Miami, Florida the venue encompasses 18,000 square feet of a luxury European style, Italian themed food hall. The diverse menu of Italian and Mediterranean fare, including homemade pasta dishes, pizza, charcuterie, grilled meats, fresh juices, salads, gelato and baked good required host of specialized cooking equipment.  The exhaust ventilation system also needed to be flexible, quiet and energy efficient.

Along with a variety of gas appliances, the venue also had solid fuel and coal fired ovens. This required a number of solutions for ventilation as well as pollution control systems to manage environmental discharge. The solid fuel (wood fired and coal fired) appliances, were vented through Halton’s Ecology-E, electrostatic precipitator. The Ecology-E unit was a double pass ESP and Double Pass Carbon Panel system.  The other mixed lines were vented through Halton’s Ecoloair, Extended Life Filter unit with Carbon Panels.

The mixed line hood systems were joined to a common duct and tied to a single EcoloAir unit, all controlled by the M.A.R.V.E.L. II demand control system. All functions of the pollution control system were managed by the M.A.R.V.E.L. system as well. This allowed for the independent operation of each hood.

Halton systems allow for a high degree of flexibility while contributing to the overall aesthetic of the space. We cannot however, take any credit for the delicious food!
