Novice is the restaurant of the Leerhotel Het Klooster hotel.

A festive opening of the completely renovated kitchens took place in Restaurant Novice, the restaurant associated with Leerhotel Het Klooster.

The renovation, which took more than four months, has resulted in a modern and sustainable working and learning environment for both the employees of Leerhotel Het Klooster and the students of MBO Amersfoort Hotelschool.

Much attention has been paid to sustainability thanks to the on-board  technologies:
Halton Capture Jet™ hoods equipped with UV-C technology, and the M.A.R.V.E.L. demand-controlled ventilation system have been chosen for the ventilation in the à la carte and banqueting kitchens.

• Halton exhaust hoods are equipped with the Capture Jet™ technology which is related to the association of two sets of nozzles supplied with an extremely low supply air volume. These nozzles fit to the lower part of the hood front as well as the sides, encircling the perimeter of the covered cooking areas. Benefits > Substantial energy savings with as much as a 50% reduction in exhaust airflow rates.

• The built-in UV-C system with UV Capture Ray™ technology neutralises the grease released by the cooking appliances. It reduces the grease build up in the ductwork to a negligible level and contributes to odors reductions discharged outside by the ventilation system. Benefits > Hygiene and fire safety levels of the ventilation are most significant, cleaning costs are minimum, and the kitchens’ environmental impact on the neighborhood is reduced significantly.

M.A.R.V.E.L., the controls platform incorporating Demand Controlled Ventilation as a key feature adjusts in real time the kitchen exhaust airflow rates, by monitoring the status of the cooking appliances. Benefits > Impressive energy savings at all levels of the kitchens ventilation, along with a sensible and tangible improvement of chefs’ and their teams comfort.

Novice is equipped with Halton Connect which is a state-of-the-art IoT (Internet of Things) platform whose foundation is an advanced and easy-to-use cloud-based portal.

It automatically keeps an eye on the operation of the systems, and alerts to any anomaly.
Halton Connect web portal provides an overview of the systems from any computer or handheld device.
